Whole Wheat Banana Walnut Loaf
This is a moist, healthy and delicious bake. A simple and easy one which you can regularly make to use up those leftover overripe bananas in your kitchen. I’m sure all of you have those last few bananas left over the counter on weekends which goes overripe by the minute I feel….Go ahead….put them to use.
Ingredients
- Butter - 1/2 cup / 113 grams
- Brown sugar - 1/2 cup / 106 grams
- Eggs - 2 large
- Salt - 1/2 teaspoon
- Large bananas - 3 to 4 medium (about 454 grams)
- Honey - 1/4 cup / 85 grams - 1/4 cup / 85 grams
- Whole Wheat Flour - 2 cups / 227 grams
- Baking soda - 1/2 teaspoon
- Baking powder - ½ teaspoon
- Cinnamon powder - ½ teaspoon
- Vanilla extract - 1 teaspoon
- Chopped walnuts - 1/2 cup / 57 grams (chopped, optional)
- Chocolate chips - ½ cup (optional)
Instructions
Preheat your oven to 175 C. Grease a 9" x 5" loaf pan.
Sift together flour, salt, baking powder and baking soda and set aside.
In a large bowl, cream together the butter and sugar until smooth and fluffy. Add the eggs, one at a time, beating well after each addition.
Add the vanilla, honey and mashed bananas, creaming until well combined. The mixture will be fairly smooth, with some scattered small chunks of banana.
Fold in the flour followed by the walnuts and chocolate chips, cream until the batter is smooth.
Spoon the batter into the prepared pan, smoothing the top. Let it rest at room temperature for 10 minutes.
Bake in the preheated oven for 50 minutes, and then gently lay a piece of aluminum foil across the top, to prevent over-browning. Bake for an additional 10 to 15 minutes, then remove the bread from the oven. A long toothpick or cake tester inserted into the center should come out clean.
Allow the loaf to cool for 10 minutes, and then remove it from the pan. Set it on a wire rack to cool completely. Slice and enjoy the moist and delicious loaf.
I tried this today and it turned out very well. I used chopped cashews instead of walnut. Thanks for the wonderful recipe.
