Healthy Banana and Walnuts Muffins

Goodness of Whole wheat, Dried fruits, Walnuts, what more you need in a muffin. This is a soft, spongy and very delicious bake. The walnuts give a crunch, the dry fruits give freshness and the banana gives the fabulous flavor. Try it once, I'm sure you will include in your routine breakfast and evening bakes menu.
Ingredients
- Whole Wheat flour - 192 grams / 1 1/2 cup
- Ripe bananas - 2 to 3 (medium, sized), smashed
- Walnuts - 1/2 cup chopped
- Black raisins or Black currants or Dried blue berries or Cranberries or - ½ cup
- Baking powder - 1/2 tea spoon
- Bicarbonate of soda - ½ tea spoon
- Soft butter - 75 grams / 1/3 cup
- Jaggery Syrup - 150 grams / 1/2 cup
- Curd - 3 Tablespoons (thick, beaten) or Egg - 1, beaten
- Vanilla Essence - 1 teaspoon
- Salt - ½ teaspoon
- Cinnamon & Nutmeg Powder - ½ teaspoon
Instructions
Ensure all the ingredients are at room temperature. It is better to keep the butter and curd/egg you will use outside the refrigerator for an hour before you begin the mixing process.
Pre heat the oven to 175 C.
Sieve together the flour, baking powder, bicarbonate of soda, salt, cinnamon and nutmeg together in a large bowl.
Cream together softened butter, jaggery syrup. Add the egg/ curd and whisk together.
Mash the bananas well, and add to the butter mix.
In a large mixing bowl mix together the flour mix, dry fruits and the walnuts.
Make a well in the center of the dry ingredients and add the butter/egg mixture, fold in roughly with a spoon, don't over mix. It will be a lumpy mix.
Set muffin liners in the baking moulds.
Spoon in the mixture until 3/4th full. If you have piping bags, fill using piping bags, makes it easy. Top each one with few walnut pieces.
Bake for 25 to 30 minutes or until the toothpick comes out clean.
Let the muffin tray cool on a wire rack for five minutes then remove the muffins and leave on the rack for another five minutes before serving.
Tips to remember:
1) Try adding 1 Table spoon strong brewed coffee or espresso; it takes the muffin to another level.
2) Choose your own dry fruits and nuts mix.
3) Use over ripe banana for best results.
4) You can replace dry fruits with chocolate chips.

How much brown sugar I can take in place of Jaggery.
Swesome recipe. Just tried muffins and it came super flavourful. i just replaced jaggery syrup with half date syrup and half brown sugar. Instead of dryfruits i added choch chips as my daughter doesnt like much dryfruits in muffin. Thank you very very much for this recipe.
