Dillkush
After mastering bread loaf and rolls, it is time for few simple variations.
Dillkush, stuffed sweet bread brings back memories of my childhood as well as the college canteen. This was a common bread roll available in almost all bakeries in the south and college canteens and everyone’s favourite.
Ingredients
- Lukewarm Water or a Mix of Milk and Water - 150 ml (2/3 cup)
- Butter or Olive Oil - 20 grams (1 1/2 tablespoons)
- All Purpose Flour - 125 grams (1 cup)
- Whole wheat flour - 125 grams (1 cup)
- Sugar or Honey - 1 table spoon
- Salt - 1/2 teaspoon
- Instant Yeast - 1 teaspoon
- Egg - 1 (for egg wash, optional)
Instructions
For filling
Shredded coconut-3/4 cup
Tutti fruti / currants & cashew / Almonds chopped- 1/2 to 1 cup
A pinch of cardamom powder, few drops of vanilla essence and a drop of any desired colour (optional)
Sugar-2 Table spoon
Mix everything together
Mix yeast in 1/8 cup warm water and a teaspoon sugar and keep aside to rise.
Add warm milk, egg, butter, sugar, salt , the risen yeast and mix well
Add flour to the mixture and knead well for 10 minutes till the dough is smooth
Keep aside, in a greased bowl for 1 hour covered with a wet towel for the dough to rise
After an hour knock down the dough and knead for a minute. Divide the dough into 2 equal portions, Roll out each rolls into two large ¼ inch round shapes. Place one half on the baking sheet lined with a parchment paper. Spread the filling over it, leave 1 cm from the edge. Brush the outer edges with a thin coat of milk or water. Cover with the second dough spread and seal the edges well using a fork, and keep aside for another 30 minutes. Just before baking brush the top of the dough with egg or milk wash, and make few slits on top for vapors to escape.
Bake in a pre- heated oven at 180 C for 25 to 30 minutes, till it is done.
Once baked and done, remove from the oven and let it cool on a wire rack.
Slice using a bread knife and enjoy most delicious Dillkush, with some hot tea.
How many eggs in recipe..havent mentioned in the ingredients list

Can pls post the coconut ball / bun that has a crusty outer part compared bun…. can’t find it at the place I stay… 🙃
