Blueberry, Orange, Walnuts and chocolate muffins
This recipe a complete breakfast, with the splish-splash of the fruits, a contrasting crunch of the walnuts, harmonized by the tranquility of the oranges and we can’t miss the chocolate. Chocolate is a very versatile element that can be paired up with almost anything. I bet this will be a sure winner muffin recipe. And as I always say…do try it…and I have given various fruits and nuts combinations for your choice.
Ingredients
- All-purpose flour - 2 cups (250 grams)
- Unsalted butter, softened - 1/2 cup (113 grams)
- Granulated sugar - 2/3 cup (135 grams)
- Eggs - 2 large, at room temperature
- Baking powder - 2 teaspoons
- Dried blue berries - ½ cup dried (fresh-1 cup) or Cranberries or black currants
- Walnuts - 1/2 cup chopped (or Almonds or pecans)
- Chocolate Chips - ½ cup
- Fresh orange juice -1/2 cup
- Grated orange zest -1 teaspoon
- Cinnamon & Nutmeg powder - a pinch each (optional) or 1 teaspoon vanilla essence
- Salt - 1/4 teaspoon
- Curd - 1/2 cup (creamed)
Instructions
Preheat the oven to 180 C.
Get all the ingredients ready in advance, that is the key for a perfect bake. Ensure all the ingredients are at room temperature before you begin.
Soak the dry fruits in orange juice, preferably overnight.
Sift together flour, baking powder, spice powder and salt into a medium bowl and set aside.
In a large bowl, cream together softened butter and powdered sugar, till it is fluffy. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition.
Fold in flour in parts into the butter mixture, alternating with the curd mix, until just combined. Fold in the soaked fruits (I used cranberries and blue berries mixed, it’s up to your choice) with juice, chocolate chips and the nuts. Ensure, you do not over mix.
Divide the batter evenly into the muffin tin, lined with muffin liners.
Bake until golden brown, about 25 minutes. Cool muffins in the pan on a rack.
Best, when served warm and ideal bake for kids tiffin box.
Note: choose on your own favorite dry fruits and nuts.

The ingredient list says granulated sugar. The steps say powdered sugar.
