POACHED PEARS ORANGE CAKE
Mildly spiced poached pears woven over with Orange flavored Cake.
Presenting a complete dessert, simple and delicious, which can be had either warm or cold. The mystery revolves around a tiny peeping clue, which draws you with its fruity fragrance, different textures and delightful looks.
Every bite gives a taste of pure bliss. It takes you through a cake, to a fruit and pudding all rolled into one, a roller coaster of diverse flavours and textures of poached pears, orange and chocolate, that works brilliantly.
Ingredients
- For Poached Pears
- Pears- 4 nos (not overripe)
- Water- 4 cups
- Sugar – 1/3 cup
- Honey – 1/3 cup
- One cinnamon stick, few whole cloves, lemon juice- half lemon, 2star anise, Vanilla extract ½ tsp
- For Orange flavored chocolate chips cake
- Butter- 1 Stick (113 gms)
- Sugar-1/2 cup
- Pinch of salt
- 2 large egg
- 1 table Spoon fresh orange zest
- Freshly squeezed juice of 1 orange
- 1 1/4 cup all-purpose flour
- Baking Powder-1 teaspoon
- 1/2 cup curd
- ½ cup dark chocolate chips
Instructions
For Poached Pears
Wash and peel off the skin of the pears, cut the bottom straight so that it can be placed vertically on the baking tray. Scoop out the center portion with the seeds.
In a large saucepan, heat water and sugar until warm and the sugar is dissolved. Add honey and spices and bring to boil.
Slide in the pears and, Keep the liquid at a very low boil and simmer the pears until cooked through, 15 to 25 minutes.
Remove from heat and let the pears cool in their liquid. Once at room temperature, cool it overnight in the refrigerator, so that the flavors gets infused into the pears.
Next day remove the pears and heat the sauce in low flames, to reduce to a thick consistency.
For Orange flavored chocolate chips cake
All ingredients hall be in room temperature and all the bowls and spoons dry.
Sieve flour and baking powder together few times and keep aside.
Cream together butter and powdered sugar, and pinch of salt. When fluffy add eggs, one at a time and orange zest. Mix well till soft and fluffy. Add in the curd and mix well.
Fold in flour and orange juice mix, slowly, finally fold in the
chocolate chips.
Assembly & Baking
Grease and line a bread loaf tin with baking paper. Ensure that the baking sheets are extended out. Spool in little cake batter at the 4 locations you are going to place the poached pears.
Carefully align the poached pears, and pipe the balance batter till you cover the pears completely.
Bake in a preheated oven at 190 C for 35 to 45 minutes.
Serving:
Set aside the cake to cool for 5 minutes, and then carefully remove the cake from the tin, holding on the baking sheet and set on a wire rack to cool completely.
Slice across each pears and served with the reduced sauce.
