Paal Paayasam / Pidi Payasam (Rice Kheer)
Just like Kerala has innumerable biriyani's varying from cities to district , likewise holds true for the payasams and pradhamans. Whenever we visited our Aunt Grace in Kollam, this delicious payasam was made.
With just a handful of ingredients which are readily available in our home entwined with a simple cooking of 30-40 minutes and voila....a delicious milky delicacy. None other than the most traditional Paal payasam

Ingredients
- Paysam or any good quality Basmati Rice - 4 handful or 1 Cup (250ml)
- Milk - 2 Liters
- Sugar - 15 Tablespoons
Instructions
In a pressure cooker, boil milk. When it starts simmering add sugar and the washed and drained rice. Cover the pressure cooker with lid and let it cook in medium high heat, till it is about to whistle. After the first whistle reduce the heat to simmer and let it cook for another 30 minutes.
Remove from the heat, and let is cool with lid on, till all the steam is settled.
Open the lid & you will be having a pink coloured delicious payasam ready.
If the payasam is too thick, add some evaporated milk or you could even reduce some fresh milk and add.
Notes:
The pink colour payasam rice or any good quality Basmati rice is best.
The pressure cooker must be cleaned thoroughly before starting.
You can flavour the paysam with cardamom, but it's optional as it's amazing on its own as well.
Top it with some roasted nuts and raisins in ghee.
You can even add few strands of saffron along with the milk.
Sugar can be replaced with 225 grams jaggery.
