Grandma’s Butter Cookie Recipe 1
How I love and adore traditional recipes 🥰. Unearthed from those heritage collections. Yet another treasure from my grandma’s collections, handed over to me by Aunty Grace.
A buttery goodness with the perfect crunch, melt in the mouth texture. The best part in those days was it was made from pure homemade butter which thoroughly enhanced the flavour by leaps and bounds. A total versatile recipe wherein you can add nuts, shredded coconut or raisins.
The single egg yolk can be replaced if needed with a tbsp of thick cream. This by no means changes the texture or flavor of the biscuits.
I’m definitely gonna try different versions of this but in the meantime give this a go!!
Ingredients
- Butter – 200 grams
- Sugar – 170 grams
- Egg Yolk – 1
- All-purpose Flour – 370 grams
- Baking Soda – ½ teaspoon
- Baking Powder – ½ teaspoon
- Lemon Juice – 1 teaspoon
- Vanilla Extract – 1 teaspoon
Instructions
Sieve together flour, baking powder and baking soda.
Cream together butter, sugar and salt together until the mix is smooth and fluffy.
Add in the egg yolk, Vanilla extract and continue creaming, scrape down the sides of the bowl few times.
Add in the flour mix and continue mixing till well incorporated.
Scrape out the mix on to a lightly floured work table and knead until the dough is smooth.
Cling wrap the dough mix and refrigerate for few hours.
Pre heat the oven at 160 C degrees.
Line your baking sheets with baking paper / parchment paper.
Divide the dough mix into 2, and pat down the dough mix to about 1/8" thick.
Cut put the cookies using cookie cutter. Place it on the prepared baking sheet, leaving little gap.
Bake in the already preheated oven until the cookies just begin to turn golden around the edges, about 15-18 minutes.
Notes:
1. The dough can be prepared and kept cling wrapped in the refrigerator for few days
2. Pat down the cookie dough to even thickness to that it will be baked evenly.
3. The cookie dough may look crumbly, but don’t worry, you will be able to pat it down.
